"I have recently upgraded my Pro-Smoker 500#, natural smoke, 10 year old oven. The upgrade included horizontal air flow baffles and the variable speed blower. I use a 16 tier jerky truck and can load 120# of Full Muscle Beef Jerky with the drying capacity being even throughout the oven. The upgrade also facilitated a shorter dry and smoke schedule. This not only saves money on utilities, but also on supplies. The greatest benefit is that I am able to get one more load of small diameter smoked sausage through my own oven each day. “I have had my micro-processor controlled Pro Smoker 500 for 3 years now. I have 2 other smokehouse; 1 Enviro-Pak and 1 Vortron neither of which is micro controlled. I never realized you don't have to babysit a smokehouse until I got my Pro Smoker, just push the number of the program you want and let it do its thing. (no worries) I also strongly suggest getting the Pro-Smoker Smoke Generator. In my mind it is by far better than sawdust. Very consistent color, very little clean-up and much less worries about fires. If I were to buy another smokehouse it would definitely be another Pro-Smoker."
